Cream Cheese Mints with Essential Oils

These are incredible easy to make even for the non-cook (Sandy) in our house! We continue to experiment with the various food-grade essential oils when it comes to flavor. This recipe is divided for 3 different flavors: lemon, peppermint & lavender.

Ingredients
  • 1 package (8 oz) cream cheese, softened
  • 6 cups powdered sugar
  • 1/4 cup granulated sugar for rolling
  • 4 drops Lemon essential oil for 1/3 of the batch
  • 2 drops Peppermint Essential Oil for 1/3 of the batch
  • 1 drop Lavender Essential Oil for 1/3 of the batch
  • color sugared sprinkles optional
  • food coloring optional
Servings: dozen small, bite sized mints
Instructions
  1. NOTE: you will repeat the instructions below once per flavor. In a mixing bowl, cream together 1/3 block cream cheese and ONE essential oil.
  2. Add in the food coloring (it only takes a tiny bit, typically one drop). We opted for yellow for lemon, a tiny bit of red (so it was more of a pink) for peppermint then purple for lavender. Beat it until it's fluffy.
  3. Then gradually add in 2 cups of the powdered sugar. Found it best to do 1/4 cup at a time. Once all the sugar is incorporated, knead into a doughball and let rest 15 minutes.
  4. Roll into balls and coat in sugar. We found that making them smaller and one-bite sized was just fine as they tend to be very sweet. Once chilled you can take out of fridge and reshape them to be perfectly round.
